First made by the man who created the now legendary Penfolds Grange, Penfolds Chief Winemaker, Max Schubert, Bin 707 Cabernet Sauvignon was Penfolds first commercial release of a single cabernet-based wine.
It is the perfect Cabernet Sauvignon representation of Penfolds House Style, with intensely flavoured fruit combined with 16 months’ maturation in new American oak hogsheads, expressing a Penfolds understanding of multi-vineyard, multi-region fruit sourcing.
Today’s Penfolds winemakers, led by chief winemaker Peter Gago, continue to ensure Bin 707 represents Penfolds House Style at its most rich and powerful, truly demonstrating the virtue of blending. Grapes selected for Bin 707 are intensely flavoured, with thick skins and small bunches. A strict relegation process post vintage ensures only the finest, most powerful, and opulent parcels are included in the final blend. Such is the quality of Bin 707, if the required fruit character, flavour profile and quality cannot be identified in the selected grapes, the wine will not be made, as evidenced by the vintages of 1970-1975, 1981, 1995, 2000, and most recently 2020.
While some of the most prestigious vineyards in the Barossa Valley and Coonawarra have been at the heart of Bin 707 since the 1970s, in recent years, cool-climate vineyards such as Robe, Padthaway and Wrattonbully have also become additional sources, making this a truly multi-regional blend of Australia’s finest Cabernet Sauvignon.

A cabernet reflection of Grange. Full-bodied with proven cellaring potential, the 2021 shows the essence of Bin 707 on the nose – blackcurrant, cassis and mulberry. The palate is balanced and complete with fresh mulberries, blackcurrant and fig with firm, glossy tannins. Consistently awarded 98-99 points from leading critics around the world, peak drinking is expected from 2026 – 2050.
