The menu’s fish and seafood call for the finest Japanese sake, of which SW’s cellars hold over 1,700 bottles, all purchased direct from a sake brewer in Japan. A venue recognized as ‘the place’ for celebrations, Champagne too has evolved as the taste has shifted from NV, to Vintage selections. Boasting over 50 top labels for caviar pairings and nightly special occasions, producers such as Delamotte & Salon have opened their cellars with rare back vintages and limited production Champagnes. The most surprising trend for SW has been the popularity of wines by the glass, here employing the Coravin wine system service for ultra-premium glass selections, offering a vast choice for a range of values and menu pairings. The wine program has evolved as a region-leading destination for fine wine, with a performance spectacle to match.
