When it comes to views, few restaurants can match Sea. Part of the Anantara Kihavah Villas luxury resort in Baa Atoll in the Maldives, it has been constructed underwater, with views of tropical fish swimming amid the coral through the vast reinforced glass windows.
One of a range of dining options at the resort (each of which offers comparably beautiful, if more conventional, views of the Indian Ocean), Sea’s reputation as one of the region’s best restaurants is based on more than its spectacular surroundings, however. Along with a menu of perfectly executed international dishes, it also has access to a World’s Best Wine Lists three-star wine list.
Put together with flair by Nilesh Bootun, the Anantara Kihavah Villas’ “wine guru,” it’s a list of many pleasures with an international outlook, the 300-bin list offering both the old and the rare (1966 Château Mouton-Rothschild) and the new and unusual (Yazgan Mahra Emir/Sultaniye, Eastern Anatolia, Turkey 2011), and with extensive choices from Australia, New Zealand, and South Africa sharing space with the Old World classics of France, Italy, and Spain, among many others.
